First, rinse the kimchi lightly under running water, pat it dry, and then cut it lengthwise into bite-sized pieces (about 1cm wide). For the pollack roe, use the back of a knife or gently rub with your fingers to remove the membrane. Separate the roe and dice it into small pieces, about 1cm in size. Cutting it too finely might reduce the chewiness, so aim for a moderate size.

Heat a little cooking oil in a pan over medium heat. Add the chopped kimchi and stir-fry until tender. Once the kimchi is softened, add the cooked rice and the diced pollack roe. Stir-fry together for about 2-3 minutes until the rice grains are fluffy and the pollack roe is cooked through, developing a savory aroma. Be mindful of the heat to prevent burning.
