Finely chop the green onion, separating the white and green parts if you like. Heat 2 tablespoons of cooking oil in a frying pan over medium heat. Add the chopped green onion and stir-fry until fragrant, infusing the oil with its aroma. This step is key for building flavor.

Once the green onion is fragrant, pour the whisked egg mixture into the pan. As the eggs begin to set, quickly stir them with chopsticks or a spatula to create soft scrambled eggs. Avoid overcooking; aim for a moist, tender texture.

When the eggs are about 70% cooked, add a bowl of warm cooked rice to the pan. Use your spatula to break up any clumps of rice and mix it evenly with the eggs.
