Ingredients

  • 6 hard-boiled eggs
  • 1/4 medium onion, finely chopped
  • 1 Tbsp chopped sweet pickled peppers (optional, for extra flavor)
  • 3 Tbsp mayonnaise
  • 1 Tbsp Dijon mustard
  • 1 Tbsp corn syrup or honey
  • 1/4 tsp herb salt
  • A pinch of dried parsley flakes (for garnish)

Cooking Instructions

Step 1

Start by hard-boiling 6 eggs. Once cooked, immediately transfer them to an ice bath to cool, then peel. Cut the cooled eggs in half and carefully scoop the yolks into a mixing bowl. Use a fork to mash the yolks until they form a smooth paste. Ensure there are no large lumps.

Step 1

Step 2

Next, finely chop the egg whites. Aim for a consistent, small dice. This will create a pleasant texture in the salad. Add the chopped egg whites to the bowl with the mashed yolks.

Step 2

Step 3

Finely chop the 1/4 onion. To mellow its sharpness, soak the chopped onion in cold water for a few minutes, then drain thoroughly. Add the drained onion to the bowl. If you enjoy a little zest, finely chop 1 tablespoon of sweet pickled peppers and add them to the mixture. The tanginess of the pickles adds a wonderful dimension.

Step 3

Step 4

Now, it’s time to bring all the flavors together. Add 3 tablespoons of mayonnaise, 1 tablespoon of Dijon mustard for a zesty kick, 1 tablespoon of corn syrup or honey for a touch of sweetness, and 1/4 teaspoon of herb salt for seasoning. Sprinkle in a pinch of dried parsley flakes for aroma. Gently stir everything together until well combined and creamy. Mix thoroughly to ensure all ingredients are evenly distributed.

Step 4

Step 5

Your delicious egg salad is ready! It’s wonderful served as is, but also fantastic in sandwiches. Try spreading it generously between slices of bread for a classic sandwich, or serve it on toasted baguette slices for a delightful appetizer. It’s a simple yet satisfying meal that’s perfect for busy days. Enjoy your homemade, wholesome egg salad!
