  • 6 hard-boiled eggs
  • 1/4 medium onion, finely chopped
  • 1 Tbsp chopped sweet pickled peppers (optional, for extra flavor)
  • 3 Tbsp mayonnaise
  • 1 Tbsp Dijon mustard
  • 1 Tbsp corn syrup or honey
  • 1/4 tsp herb salt
  • A pinch of dried parsley flakes (for garnish)

Cooking Instructions

Step 1

Start by hard-boiling 6 eggs. Once cooked, immediately transfer them to an ice bath to cool, then peel. Cut the cooled eggs in half and carefully scoop the yolks into a mixing bowl. Use a fork to mash the yolks until they form a smooth paste. Ensure there are no large lumps.

Step 2

Next, finely chop the egg whites. Aim for a consistent, small dice. This will create a pleasant texture in the salad. Add the chopped egg whites to the bowl with the mashed yolks.

Finely chop the 1/4 onion. To mellow its sharpness, soak the chopped onion in cold water for a few minutes, then drain thoroughly. Add the drained onion to the bowl.
