  • Dried radish greens (Siraegi), 1 handful (approx. 50g)
  • Cheongyang chili peppers, 2
  • White part of scallion, 1/4 stalk
  • Minced garlic, 1/2 tsp

Cooking Instructions

If using dried Siraegi, pre-soak it in cold water until softened, or thaw it if previously frozen. One handful is a good portion for a single serving. Using homemade dried radish greens will impart a deeper flavor.

To make it easier to eat, cut the softened Siraegi into bite-sized pieces, about 5-7cm in length. This ensures the greens integrate well into the soup.

In a bowl, combine the cut Siraegi with 1 Tbsp of Doenjang, 1/2 tsp of minced garlic, and 2 Cheongyang chili peppers that have been seeded and finely chopped. If you enjoy a spicier kick, feel free to leave the seeds in.

Gently massage the ingredients into the Siraegi with your hands, ensuring the seasoning is evenly distributed. Let it marinate for about 10 minutes. This step allows the savory flavor of the Doenjang to deeply penetrate the radish greens.

Pour 3 cups (approx. 600ml) of anchovy-kelp broth into a pot. While water or rice water can be used, a good broth will significantly enhance the depth and richness of the soup.

Once the broth reaches a boil, add all the seasoned Siraegi to the pot. Bring it to a rolling boil over high heat, uncovered, for about 10 minutes. It’s crucial to boil it sufficiently so the Siraegi becomes tender and the flavors meld. Taste the soup and adjust the seasoning with soup soy sauce or salt as needed. Finally, add thinly sliced scallions and simmer for another moment to complete your delicious Siraegi Guk.
