Main Ingredients- 1/5 Aged Pumpkin (approx. 300-400g)
- 1/2 Onion
- 5 Tbsp Dried Shrimp (can also use crushed dried shrimp)
- 2 Red or Korean Green Chilies (adjust to your spice preference)
Batter & Seasoning- 1.5 cups Pancake Mix (approx. 180g)
- 500ml Water
- 1 Tbsp Cooking Oil (per pancake)
- 5 Tbsp Pickle Brine (instead of soy sauce, adds depth of flavor)

Cooking Instructions
Step 1
In a large bowl, combine 1.5 cups of pancake mix and 500ml of water. Whisk until smooth, ensuring there are no lumps to create a thin batter.
Step 2
Prepare the aged pumpkin by removing the skin and seeds, then thinly julienne it. Slicing it about 3-5mm thick will provide a pleasant texture. (The natural sweetness of the pumpkin is sufficient, so no added sugar is needed.)

Add the julienned pumpkin to the batter bowl and gently mix to coat the pumpkin evenly with the batter.
Step 4
Stir in 5 tablespoons of dried shrimp. The savory umami from the shrimp will enhance the overall flavor of the pancakes.

Thinly slice the onion and add it to the batter, then mix. Finely julienne the chilies and add them. If you prefer a spicier taste, use Korean red chilies (cheongyang pepper); for a milder flavor, opt for Korean green chilies (oigochu). Gently mix all ingredients together.
