Cooking Instructions
Step 1
First, wash the scallions thoroughly, pat them dry, and finely chop them. These will be used as a garnish.
Step 2
Heat a pan with a little cooking oil. Add the minced garlic and ground beef, then stir-fry. It’s important to break up the beef as it cooks to prevent it from clumping.
Step 3
Once the beef is mostly cooked, add soy sauce, sugar, cooking wine, black pepper, and sesame oil. Stir-fry until the seasonings are well combined and the beef is fully cooked. The key is to sauté until the sweet and savory flavors are rich.
Step 4
Bring a generous pot of water to a boil. Add the buckwheat soba noodles and cook according to the package instructions (about 6-7 minutes), or until al dente. Once cooked, drain the noodles and rinse them thoroughly under cold running water to remove excess starch, then drain well. This step ensures a chewy texture.
Step 5
In a serving bowl, place the chilled buckwheat soba noodles. Top with the stir-fried beef and the chopped scallions. Finally, place the egg yolk in the center and sprinkle with gochugaru, if desired. Your delicious Beef Buckwheat Bibim-myeon is now complete!
