  • Egg Yolk: 1
  • Scallions: 5 stalks
  • Gochugaru (Korean Chili Flakes): a pinch (to taste)

Beef Seasoning Ingredients
  • Soy Sauce: 2 Tbsp
  • Sugar: 1 Tbsp
  • Minced Garlic: a little
  • Cooking Wine (Mirin or Cheongju): 1 Tbsp
  • Black Pepper: a pinch
  • Sesame Oil: a little

Cooking Instructions

Step 1

First, wash the scallions thoroughly, pat them dry, and finely chop them. These will be used as a garnish.

Step 2

Heat a pan with a little cooking oil. Add the minced garlic and ground beef, then stir-fry. It’s important to break up the beef as it cooks to prevent it from clumping.

Once the beef is mostly cooked, add soy sauce, sugar, cooking wine, black pepper, and sesame oil. Stir-fry until the seasonings are well combined and the beef is fully cooked. The key is to sauté until the sweet and savory flavors are rich.

Bring a generous pot of water to a boil. Add the buckwheat soba noodles and cook according to the package instructions (about 6-7 minutes), or until al dente. Once cooked, drain the noodles and rinse them thoroughly under cold running water to remove excess starch, then drain well. This step ensures a chewy texture.
