I didn’t have any special ingredients for breakfast this morning. I found a handful of pre-soaked glass noodles in the fridge and decided to stir-fry them with some bacon. It turned out surprisingly delicious! This dish is a fantastic way to use up leftover noodles and bacon, creating a satisfying meal with minimal effort.

Main Ingredients

  • Soaked glass noodles, 1 handful (approx. 100-150g)
  • Thick-cut bacon, 2 strips (or 6-8 slices of regular bacon)
  • Scallion (green onion), 1 stalk (white part mainly)
  • Cooked rice, for 2 servings

Seasoning & Others

  • Cornstarch, 1 tsp
  • Water, 3 tbsp
  • Soy sauce, 1 tbsp
  • Oyster sauce, 1 tbsp
  • Cooking oil, 3 tbsp
  • Black pepper, a pinch (optional)
  • Sesame seeds, a pinch (for garnish)

Cooking Instructions

Step 1

First, prepare the glass noodles. If you have pre-soaked them for about an hour, boil them in water for another 3-4 minutes. This step ensures the noodles are perfectly chewy. After boiling, rinse them under cold water to prevent sticking and separate them.

Now, let’s prepare the other ingredients. Chop the softened glass noodles into bite-sized pieces. Slice the bacon into thin strips, about 0.5 cm wide.

Finely chop the scallion. This will add a wonderful aromatic flavor to the dish.

Heat 3 tablespoons of cooking oil in a pan over medium-low heat. Add the chopped scallions and sauté them until they become fragrant and slightly golden, about 2-3 minutes. Cooking the scallions thoroughly releases their natural sweetness and aroma.

Once the scallions are fragrant, add the sliced bacon to the pan. Stir-fry them together until the bacon is cooked through and lightly crisped. The rendered bacon fat will add a delicious savory flavor to the dish.

Add the prepared glass noodles to the pan with the bacon and scallions. Stir-fry everything together until the noodles are heated through and well combined. To prevent sticking, keep stirring occasionally. Push the ingredients to one side of the pan to create a space for the sauce.

In the empty space on the side of the pan, add 1 tablespoon of soy sauce and 1 tablespoon of oyster sauce. Let them bubble slightly for a few seconds, then mix everything together with the noodles, bacon, and scallions. Stir-fry until the sauce evenly coats all the ingredients.

In a small bowl, mix 1 teaspoon of cornstarch with 3 tablespoons of water to create a slurry. Gradually pour this slurry into the pan while stir-frying. This will thicken the sauce and give it a nice glossy finish. If desired, add a pinch of black pepper and stir well.
