  • 1/2 carrot
  • 1/4 onion
  • 1/4 green bell pepper
  • A little shiitake mushroom
  • 1/2 cup cocktail shrimp
  • 3 strips bacon

First, prepare three fresh avocados and carefully slice them in half. Be gentle to avoid damaging the pits.

Using a spoon, cleanly remove the avocado pits. Then, carefully scoop out the avocado flesh with a spoon into a bowl. Ensure you leave the skin intact as it will serve as your gratin cup.

Wash and peel half a potato and half a carrot. Julienne them into thin strips, about 0.5 cm thick. Aim for uniform thickness for even cooking.

Julienne one quarter of an onion and one quarter of a green bell pepper into similar thin strips. For added flavor and texture, you can also thinly slice 2-3 shiitake mushrooms and add them in. The mushrooms’ slight chewiness will enhance the gratin.

Add 3 tablespoons of breadcrumbs and mix gently. Season lightly with pink salt (or regular salt) to taste. Continue to stir and cook over low heat until all the ingredients are well combined. This step completes the gratin filling.
