- 1/2 potato
- 1/2 carrot
- 1/4 onion
- 1/4 green bell pepper

- 1/2 cup cocktail shrimp

Step 1
First, prepare three fresh avocados and carefully slice them in half. Be gentle to avoid damaging the pits.

Using a spoon, cleanly remove the avocado pits. Then, carefully scoop out the avocado flesh with a spoon into a bowl. Ensure you leave the skin intact as it will serve as your gratin cup.

Wash and peel half a potato and half a carrot. Julienne them into thin strips, about 0.5 cm thick. Aim for uniform thickness for even cooking.

Julienne one quarter of an onion and one quarter of a green bell pepper into similar thin strips. For added flavor and texture, you can also thinly slice 2-3 shiitake mushrooms and add them in. The mushrooms’ slight chewiness will enhance the gratin.

Rinse the cocktail shrimp under cold water and pat them dry. Finely chop the three strips of bacon into small pieces. Prepping them now will make sautéing easier.

All the filling ingredients for the gratin are now ready. The julienned vegetables, shrimp, bacon, and scooped avocado flesh are a colorful mix, promising a delightful flavor.
