  • 1/4 stalk of scallion, finely chopped
  • 2 cans of tuna, drained of oil
  • 2 bowls of warm cooked rice
  • 2 eggs

  • 1 Tbsp sugar (or Won Dang)
  • 1 Tbsp gochugaru (Korean chili flakes)
  • 1 Tbsp guk-ganjang (Korean soy sauce)
  • 1 Tbsp toasted sesame seeds
  • A little cooking oil

Cooking Instructions

First, finely chop the scallion. Roughly chop the kimchi into bite-sized pieces (about 1-1.5 cm). Chopping it larger will enhance the satisfying chewiness and overall deliciousness.

Add the generously chopped kimchi to a pan. Sprinkle 1 tablespoon of sugar evenly over the kimchi to mellow out its tartness and add a touch of sweetness. (Adjust sugar quantity if using very sour aged kimchi.)

Heat a generous amount of cooking oil in the pan. Sauté the chopped scallions and kimchi together. Drain any excess kimchi juice to preserve the pure kimchi flavor. Stir-fry over medium heat until the kimchi becomes translucent and softened.

Add the drained tuna to the pan and stir-fry well with the kimchi. The savory richness of the tuna will meld beautifully with the kimchi, enhancing the flavor.

Add two bowls of warm cooked rice. Using a spatula, break up any clumps of rice and stir-fry evenly, ensuring the rice grains are well mixed with the kimchi and tuna mixture. Continue stir-frying until all the rice is coated and seasoned.
