Cooking Instructions
Step 1
First, finely chop the scallion. Roughly chop the kimchi into bite-sized pieces (about 1-1.5 cm). Chopping it larger will enhance the satisfying chewiness and overall deliciousness.

Add the generously chopped kimchi to a pan. Sprinkle 1 tablespoon of sugar evenly over the kimchi to mellow out its tartness and add a touch of sweetness. (Adjust sugar quantity if using very sour aged kimchi.)

Heat a generous amount of cooking oil in the pan. Sauté the chopped scallions and kimchi together. Drain any excess kimchi juice to preserve the pure kimchi flavor. Stir-fry over medium heat until the kimchi becomes translucent and softened.
