First, let’s prepare our star ingredient: the pork chunks, which we’ve conveniently purchased from the supermarket. Trim the base of the enoki mushroom and separate the strands. Finely chop the green onion.

Heat a pan over medium heat and add the pork chunks. As the pork begins to brown on the outside, add the minced garlic and chopped green onion. Stir-fry them together to release their fragrance. It’s a good tip to add the vegetables after the pork has started to cook to manage the moisture released from the ingredients.

Once the pork and aromatics are fragrant, add the prepared enoki mushrooms and stir-fry until they soften, which should only take a minute or two.
