  • 3 Bay leaves
  • 230g Radish
  • 10 cloves Whole garlic

  • 1L Water or Stock

Dipping Sauce (Galbitang Sauce)

  • 1 Tbsp Soy sauce
  • 1 Tbsp Sugar
  • 1.5 Tbsp Vinegar
  • 2 Tbsp Water

Cooking Instructions

Step 1

First, soak the pork back ribs in cold water for 1-2 hours to remove any blood. Changing the water multiple times during this process will help remove blood more effectively.

Step 1

Step 2

To ensure a clear broth, we’ll blanch the ribs. Bring a pot of water to a boil, add 3 bay leaves, then submerge the pork ribs. Once the water returns to a boil, let it simmer for about 5 minutes to remove impurities.

Step 2

Step 3

Rinse the blanched ribs thoroughly under cold water. While rinsing, trim away any excess fat or any unpleasant bits from between the bones. This step contributes to a clearer and milder broth.

Step 3

Step 4

Now, let’s start making the broth. Place the cleaned pork back ribs in a deep pot. Add the roughly chopped onion, leeks, and minced ginger. Pour enough water to completely cover the ribs.

Step 4

Step 5

Bring the pot to a boil over high heat. Once boiling, reduce the heat to medium, cover the pot, and simmer for 1 hour to thoroughly extract the rich flavor from the pork bones. After simmering, remove and set aside the cooked vegetables, or discard them.

Step 5

Step 6

Lightly crush the whole garlic cloves with the side of a knife. This will help release more garlic aroma into the soup.

Step 6

Step 7

Cut the radish into bite-sized cubes, suitable for easy eating. Finely chop the red chili pepper and the remaining leek for garnish.

Step 7

Step 8

Heat a dry pan over low heat. Add the crushed garlic and peppercorns. Gently toast them until fragrant, being careful not to burn them. Remove from heat once the garlic aroma is released.

Step 8

Step 9

Pour the well-simmered pork back ribs and the extracted broth into the cooking pot.

Step 9

Step 10

Add the base seasonings for the broth: 1 tablespoon of salt, 1 tablespoon of oyster sauce, and 1 tablespoon of sugar.

Step 10

Step 11

As the soup simmers, skim off any foam or scum that rises to the surface. This is a crucial step for achieving a clear and clean-tasting broth.

Step 11

Step 12

Add the cubed radish to the pot. Once the soup returns to a boil, reduce the heat to medium and continue to simmer for about 20 minutes, or until the radish is tender and translucent.

Step 12

Step 13

Taste the soup and adjust the seasoning with more salt if needed. Finally, add the chopped leeks and red chili pepper, and simmer for another minute or two to complete your delicious pork back rib soup!

Step 13

Step 14

Let’s also make a tasty dipping sauce for the meat! In a small bowl, mix 1 tablespoon of soy sauce, 1 tablespoon of sugar, 1.5 tablespoons of vinegar, and 2 tablespoons of water until well combined. This creates a sweet and tangy sauce. Now, enjoy your hearty and delicious pork back rib soup!
