Chicken Skewer Ingredients

  • 1kg boneless, skinless chicken thigh, cut into bite-sized pieces
  • 1 large scallion (green onion), cut into pieces the same size as the chicken
  • 1 cup soju or cooking wine (to remove chicken odor)
  • 1 Tbsp salt
  • 1 Tbsp minced garlic

Sauce Ingredients

  • Teriyaki Sauce Ingredients
  • 1 cup soy sauce
  • 1/2 cup katsuobushi broth (or katsuobushi soy sauce)
  • 2 cups water
  • 2 onions, roughly chopped
  • 1 large scallion (green onion), roughly chopped
  • 10 cloves garlic
  • 1/4 cup sugar
  • 2 Tbsp cornstarch
  • 2 Tbsp water (for cornstarch slurry)
  • 3 Tbsp oyster sauce

Cooking Instructions

Prepare all the ingredients for the chicken skewers and teriyaki sauce. Rinse the chicken thigh meat thoroughly.

Cut the chicken thigh meat into bite-sized pieces, about 2.5-3 cm. It’s important to keep the pieces relatively large so they don’t dry out during cooking.

In a bowl, combine the cut chicken with 1 Tbsp salt, 1 Tbsp minced garlic, and 1 cup of soju or cooking wine. Mix well and let it marinate for about 10 minutes to remove any unwanted odors from the chicken.
