- 1 cup soy sauce
- 1/2 cup katsuobushi broth (or katsuobushi soy sauce)
- 2 cups water
- 2 onions, roughly chopped
- 1 large scallion (green onion), roughly chopped
- 10 cloves garlic
- 1/4 cup sugar
- 2 Tbsp cornstarch
- 2 Tbsp water (for cornstarch slurry)
- 3 Tbsp oyster sauce

- 1/2 cup katsuobushi broth (or katsuobushi soy sauce)
- 2 cups water
- 2 onions, roughly chopped

- 2 Tbsp water (for cornstarch slurry)

Cooking Instructions
Step 1
Prepare all the ingredients for the chicken skewers and teriyaki sauce. Rinse the chicken thigh meat thoroughly.

Cut the chicken thigh meat into bite-sized pieces, about 2.5-3 cm. It’s important to keep the pieces relatively large so they don’t dry out during cooking.
