  • 1 Zucchini (medium size)
  • 2 portions of somyeon noodles (approx. 200g)

Cooking Instructions

First, wash the zucchini thoroughly, remove the ends, and julienne it thinly using a coarse grater or a knife. Avoid making them too thin, as they might become mushy when stir-fried. Aim for a moderate thickness.

Sprinkle 1/2 Tbsp of salt evenly over the julienned zucchini and let it sit for 10 minutes to salt. This process draws out excess moisture, improving the texture and allowing the zucchini to absorb flavor.

While the zucchini is salting, let’s make the delicious seasoning sauce. In a small bowl, combine 1 Tbsp gochugaru, 1/2 Tbsp sugar, 1/2 Tbsp minced garlic, and 2 Tbsp soy sauce. Mix well.

Now it’s time to cook the somyeon noodles. Fill a large pot with plenty of water and bring it to a rolling boil over high heat.

Once the water is boiling, add 2 portions of somyeon noodles. Stir with chopsticks to prevent sticking, and cook for about 3 minutes. Somyeon can become soggy if overcooked, so refer to the package instructions but around 3 minutes is usually ideal.

Drain the cooked somyeon noodles in a colander. Rinse them thoroughly under cold running water to cool them down and achieve a chewy texture.

Gently squeeze out the water from the zucchini that has been salted for 10 minutes, or pat it dry with paper towels. Removing excess moisture is key to prevent the dish from becoming watery when stir-fried.

Heat 1 Tbsp of cooking oil in a pan over high heat. Add the drained zucchini and stir-fry for about 2 minutes until it slightly softens but retains a slight crispness. This quick stir-fry is important to keep the zucchini’s texture pleasant.

Add the prepared seasoning sauce to the stir-fried zucchini. Reduce the heat to medium and cook for another minute until the sauce is well incorporated. Then, add 50ml of water and stir-fry briefly. This will result in moist and flavorful stir-fried zucchini.

Finally, place a portion of the cooked somyeon noodles in a serving bowl. Top generously with the stir-fried zucchini. Garnish with 2 Tbsp of toasted sesame seeds and drizzle with 1 Tbsp of sesame oil for added nuttiness and savory flavor. Enjoy your delicious zucchini noodles!
