First, wash and prepare your zucchini. The key to a great Zucchini Jeon is to highlight the zucchini’s natural flavor. So, besides basic seasonings, we won’t add any other main ingredients. We’ll focus on enjoying the fresh taste of zucchini. We’ll simply add some green onions and chili peppers for color and a hint of flavor.

Trim the ends of the zucchini and thinly julienne it into about 0.2cm thick strips, keeping the skin on. Finely chop the green onions or scallions. Deseed the red and green chili peppers and slice them thinly on an angle for garnish. In a mixing bowl, combine the Korean pancake mix and all-purpose flour in a 1:1 ratio. Crack in the 2 eggs, and season with salt and sugar for a basic flavor profile. Lastly, pour in 100ml of water and mix well until there are no lumps to create the batter. If it’s too thick, add a little more water; if it’s too thin, add a bit more flour to adjust the consistency.

Cook for about 2-3 minutes until the bottom is golden brown, then carefully flip it over and cook the other side until golden brown as well. It’s important to manage the heat well so it doesn’t burn and cooks through evenly. Finally, arrange the prepared red and green chili peppers on top for a beautiful garnish.
