Zucchini and shrimp are a fantastic pair that complement each other wonderfully. Shrimp are rich in chitosan, which is beneficial for memory enhancement. Its taurine and amino acid components are also said to help reduce cholesterol, improve blood circulation, prevent high blood pressure, aid in detoxification, and enhance liver function. Zucchini, with its high water content, is believed to help with the absorption of nutrients. Today, I’ve prepared a delicious rice bowl using frozen shrimp and zucchini. I often use frozen shrimp for cooking because preparing fresh shrimp can be a bit cumbersome. Since the heads and intestines are already removed, they are very convenient to use. This recipe combines zucchini, which helps the body absorb the diverse nutrients from shrimp, to create a nutritious and satisfying one-bowl meal. Enjoy this delightful and healthy dish!

Basic Ingredients

  • 8 Frozen Shrimp
  • 1/3 Zucchini
  • 1 Onion
  • 1 Tbsp Minced Garlic

Seasoning Ingredients

  • 3 Tbsp Soy Sauce
  • 3 Tbsp Mirin (Rice Wine)
  • 1 Tbsp Oyster Sauce
  • 1 Tbsp Gochugaru (Korean Chili Flakes)
  • 1 Tbsp Sesame Oil
  • 1/2 Tbsp Sesame Seeds

Thinly slice the zucchini and onion into julienne strips. Slicing them thinly allows them to absorb the sauce better and cook quickly, enhancing the overall flavor.

Thaw the frozen shrimp by placing them in a bowl and covering them with cold water for about 10-15 minutes. To help remove any potential ‘fishy’ smell, you can add a splash of mirin to the thawing water. Once thawed, gently pat the shrimp dry with paper towels to remove excess moisture. This step is crucial for achieving a good sear.

In a small bowl, combine the soy sauce (3 Tbsp), mirin (3 Tbsp), oyster sauce (1 Tbsp), gochugaru (1 Tbsp), sesame oil (1 Tbsp), and sesame seeds (1/2 Tbsp). Whisk everything together until well combined to create a flavorful sauce mixture.

Heat 1-2 tablespoons of cooking oil in a skillet or wok over medium heat. Add the minced garlic and sauté until fragrant, about 30 seconds. Be careful not to burn the garlic. Add the prepared shrimp to the skillet and cook until they turn pink and are almost cooked through, stirring occasionally.

Once the shrimp are nearly cooked, add the julienned onion and zucchini to the skillet. Stir-fry with the shrimp for about 1-2 minutes until the vegetables are slightly tender-crisp. Pour the prepared sauce mixture over the ingredients. Increase the heat to high and stir-fry everything together for another minute or two, ensuring the sauce coats all the ingredients evenly. Cook until the sauce has thickened slightly and the vegetables are tender. Your delicious zucchini and shrimp stir-fry is ready!
