  • 1/2 block firm tofu (for stewing or pan-frying)
  • 1 Tbsp fermented salted shrimp (for a savory broth base)
  • 1 red chili pepper (for color and a hint of spice)
  • 1 tsp minced garlic
  • 1 handful green onions (chopped)
  • 500ml broth (anchovy-kelp broth or rice water works well)

Cooking Instructions

Step 1

Hello! Today, we’re going to make a savory and refreshing Ae-hobak Jeotguk, a delicious soup using seasonal zucchinis that’s quick and easy to prepare. It’s perfect when you don’t have much appetite or need a satisfying side dish.

Step 1

Step 2

Slice the zucchini into half-moon or ginkgo leaf shapes, about 0.5cm thick. Cut the tofu into bite-sized cubes, similar in size to the zucchini. Finely chop the red chili pepper, removing the seeds, for a touch of color.

Step 2

Step 3

Pour the 500ml of broth into a pot. Add the sliced zucchini, tofu, and minced garlic. Adding the ingredients at this stage allows the flavors to meld beautifully, creating a richer taste.

Step 3

Step 4

Now it’s time to add the key ingredient: fermented salted shrimp. Add 1 tablespoon of whole fermented shrimp, or if you prefer a clearer, cleaner taste, you can use just the brine from the shrimp. Adjust the amount to your taste. (If the shrimp is too salty, you can add a little soy sauce or soup soy sauce.)

Step 4

Step 5

Once all the ingredients and fermented shrimp are in the pot, bring it to a boil over medium heat. When the soup starts to bubble, reduce the heat slightly and simmer for about 5-7 minutes, or until the zucchini is tender. Then, add the chopped red chili pepper and green onions, and let it simmer for another moment to release their fresh aroma. This completes your delicious Ae-hobak Jeotguk! No additional seasonings are typically needed.

Step 5

Step 6

There you have it! A delicious Ae-hobak Jeotguk is ready. The clear, savory broth combined with the tender zucchini and soft tofu is truly wonderful. Enjoy it with a bowl of warm rice for a fulfilling meal!
