Main Ingredients- Sea lettuce (Mul-pa-rae) 200g
- Radish 150g
Seasoning- 4 Tbsp Vinegar
- 2 Tbsp Sugar
- 1/3 Tbsp Salt
- 1/2 Tbsp Minced Garlic
For Salting the Radish- 1 Tbsp Sugar
- 1/2 Tbsp Salt
For Washing the Sea Lettuce- 1 Tbsp Coarse Salt
- 1 Tbsp Vinegar
- 4 Tbsp Vinegar
- 2 Tbsp Sugar
- 1/3 Tbsp Salt
- 1/2 Tbsp Minced Garlic
For Salting the Radish- 1 Tbsp Sugar
- 1/2 Tbsp Salt
For Washing the Sea Lettuce- 1 Tbsp Coarse Salt
- 1 Tbsp Vinegar
- 1 Tbsp Coarse Salt
- 1 Tbsp Vinegar
Cooking Instructions
Step 1
In a bowl, combine water with 1 Tbsp of coarse salt and 1 Tbsp of vinegar. Mix well. This mixture will be used to clean the sea lettuce.
Step 2
Drain the sea lettuce briefly in a sieve. Then, place it in the prepared salt and vinegar water and rub it vigorously to create foam. This step helps to remove any fishy smell and thoroughly clean the sea lettuce.
Step 3
While washing, carefully pick out any small shells or impurities mixed in with the sea lettuce. Rinse thoroughly after creating foam, and then rinse again under running water 3-4 times until completely clean.
Step 4
Gather the clean sea lettuce in your hands and squeeze out as much water as possible. If too much water remains, the dish might turn out too bland.
Step 5
Cut the squeezed sea lettuce into bite-sized pieces, about 2-3 cm long. Cutting them to a manageable length will make them easier to eat.
Step 6
Peel the radish and slice it thinly into matchsticks. Try to cut the radish to a similar thickness as the sea lettuce for a harmonious texture.
Step 7
In a separate bowl, combine the julienned radish with 1 Tbsp of sugar and 1/2 Tbsp of salt. Toss well and let it sit for 20 minutes to salt. This process draws out moisture from the radish, keeping it crisp.

After 20 minutes, the radish will have released water. Gently squeeze out the excess water from the radish with your hands. Be careful not to squeeze too hard, or the radish might become mushy.

In a small bowl, combine all the seasoning ingredients: 4 Tbsp vinegar, 2 Tbsp sugar, 1/3 Tbsp salt, and 1/2 Tbsp minced garlic. Stir until well combined and the sugar and salt are dissolved.
Step 10
Add the squeezed sea lettuce and the drained radish to a mixing bowl. Pour the prepared seasoning sauce over them. Gently mix with your hands, ensuring the seasoning coats all the ingredients evenly.

Finally, sprinkle with toasted sesame seeds, if desired, for extra flavor and a beautiful finish.
