I used pre-cooked scallops that were in my freezer to easily make this delicious scallop salad. It’s fantastic as a side dish for rice, and if you have somyeon (thin noodles) or ramyeon noodles, it makes a wonderful cold noodle dish. Let’s make a simple yet incredibly satisfying scallop salad that’s perfect for mixing with rice!

Main Ingredients

  • Pre-cooked scallops 180g
  • 1/4 Onion
  • 1/4 Bell pepper (use different colors for a prettier dish!)
  • A small amount of Green onion (finely chopped)

Spicy, Sweet, and Tangy Dressing

  • Gochujang (Korean chili paste) 2 Tbsp
  • Gochugaru (Korean chili flakes) 1 Tbsp (adjust to your spice preference)
  • Paprika powder 1/2 Tbsp (for color and flavor enhancement!)
  • Soy sauce 2 Tbsp
  • Sugar 1 Tbsp
  • Oligosaccharide (corn syrup) 1 Tbsp (for gloss and sweetness)
  • Vinegar 2 Tbsp (the key to tanginess!)
  • Mirin (cooking wine) 1 Tbsp (to remove any fishy smell)
  • Minced garlic 1 Tbsp (for aroma!)
  • Lemon juice 1 Tbsp (adds extra freshness)
  • Sesame oil 1 Tbsp (completes the nutty flavor)
  • Sesame seeds, a sprinkle (for garnish)

Cooking Instructions

Step 1

Take the pre-cooked scallops from the freezer and briefly blanch them in boiling water for 1 minute and 30 seconds. Cooking them for too long can make them tough, so precise timing is important.

Immediately rinse the blanched scallops under cold water to cool them down, then drain them thoroughly in a colander. If there’s excess water, the dressing might become diluted.

While the scallops are blanching, combine all the dressing ingredients in a bowl to create the flavorful sauce. Feel free to adjust the amount of sugar and vinegar to your liking.

Thinly slice the onion and bell pepper into julienne strips. Using colorful bell peppers will make the dish look much more appealing.

Place the drained scallops, chopped green onion, sliced onion, and bell pepper into a bowl. Pour the prepared dressing over them and gently mix with your hands until everything is well combined. This ensures the flavors are evenly distributed.

Finally, drizzle in 1 Tbsp of sesame oil and sprinkle generously with sesame seeds for the perfect finish. Your refreshing, tangy, and spicy scallop salad is now ready! It’s delicious right away, or even better after chilling in the refrigerator for a bit.
