Ingredients

  • 250g Ssammu (pickled radish wraps) or Naengmyeon pickled radish
  • A little green onion (scallions are even better if you have them)
  • 1 Tbsp Gochugaru (Korean chili flakes)
  • 0.5 Tbsp Soy Sauce
  • 0.5 Tbsp Sesame Oil
  • 0.5 Tbsp Toasted Sesame Seeds
  • 1 tsp Minced Garlic

Cooking Instructions

First, drain the liquid from the ssammu or naengmyeon pickled radish using a sieve. Gently squeeze the pickled radish with your hands to remove any excess moisture. Be careful not to squeeze too hard, as it might tear the radish. Cut it into bite-sized pieces, about 2-3 cm long.

Place the cut pickled radish pieces into a large bowl. Separate any clumps so that the dressing can coat them evenly.

Finely chop the green onion. If you have scallions, they will add an even more fragrant and delicious flavor. It’s best to chop the green onion as thinly as possible so it mixes well with the dressing.

Now it’s time to add all the seasoning ingredients. Add 1 tablespoon of gochugaru (Korean chili flakes), 1 teaspoon of minced garlic, 0.5 tablespoon of soy sauce for umami, 0.5 tablespoon of sesame oil for a nutty aroma, and 0.5 tablespoon of toasted sesame seeds for extra flavor.

Gently mix the pickled radish, chopped green onion, and the seasoning ingredients together using a spatula or your hands. Mix lightly to avoid bruising the radish; the key is to ensure all the ingredients are coated evenly with the seasoning.
