Main Ingredients- 500g chicken breast
- 1 cup chicken fry mix (or tempura flour)
- 1 Tbsp crushed peanuts
Sweet & Savory Soy Garlic Sauce- 2 Tbsp soy sauce
- 1/2 Tbsp sugar
- 2 Tbsp corn syrup (or oligodang)
- 1 Tbsp pear juice or onion extract
- 1 Tbsp mirin (or cooking wine)
- 1/2 Tbsp minced garlic
- 2 Tbsp soy sauce
- 1/2 Tbsp sugar
- 2 Tbsp corn syrup (or oligodang)
- 1 Tbsp pear juice or onion extract
- 1 Tbsp mirin (or cooking wine)
- 1/2 Tbsp minced garlic
Cooking Instructions
Step 1
First, cut the 500g of chicken breast into bite-sized pieces, about 2-3 cm. To remove any gamey smell and season the chicken, lightly sprinkle with salt and pepper. Mix well and let it marinate for about 10 minutes.
Step 2
In a bowl, combine 1 cup of fry mix with 2/3 cup of water to create a batter with a few lumps; avoid overmixing, as this can develop gluten and make the coating tough. Add the marinated chicken pieces and toss thoroughly to ensure the batter evenly coats each piece.
Step 3
In a pot, heat enough cooking oil to generously cover the chicken to 190°C (375°F). You can test the temperature by dropping a wooden chopstick into the oil; if small bubbles form around it, the oil is ready. Carefully add the battered chicken pieces to the hot oil. Fry over medium heat for about 8 minutes, until golden brown and crispy. Flipping them halfway through will ensure even cooking. Adjust the frying time based on the size of the chicken pieces.
Step 4
Once fried to a perfect crisp, remove the chicken pieces and place them on a wire rack to drain excess oil, or lay them on a plate lined with paper towels to absorb the grease. This step helps maintain the crispiness of the coating.
Step 5
Now, let’s make the sweet and savory soy garlic sauce. In a frying pan, combine 2 Tbsp soy sauce, 1/2 Tbsp sugar, 2 Tbsp corn syrup, 1 Tbsp pear juice (or onion extract), 1 Tbsp mirin, and 1/2 Tbsp minced garlic. Bring to a simmer over medium-low heat. Once the sauce slightly thickens, add the fried chicken. Increase the heat to medium-high and stir-fry quickly for about 1 to 1.5 minutes, ensuring the sauce coats every piece of chicken. Be careful not to burn the sauce.
Step 6
Finally, transfer the well-coated, warm soy garlic chicken bites to a serving dish. Sprinkle generously with 1 Tbsp of crushed peanuts for an extra nutty crunch. Your delicious Youn’s Kitchen-style chicken bites are ready to be enjoyed! It’s highly recommended to serve and eat them immediately while they’re warm.
