This Yeolmu Kimchi Bibim-myeon is made by mixing noodles with a flavorful sauce created from kimchi brine and broth, topped with fresh Yeolmu-Eolgal Kimchi. It’s a perfect summer dish that can be easily prepared at home with minimal garnishes, guaranteed to awaken your appetite on hot days.
Main Ingredients- 1 cup Yeolmu-Eolgal Kimchi (chopped into bite-sized pieces)
- 2 servings Somyeon noodles
- Assorted lettuce leaves (washed and roughly torn)
Cooking Instructions
Step 1
First, prepare the sauce base. In a bowl, combine 2 cups of chilled broth with 1/2 cup of kimchi brine. Add 1 Tbsp of gochujang and whisk thoroughly until no lumps remain. Stir in 1 Tbsp of sugar and 1 tsp of vinegar to create the primary seasoning sauce. Taste and adjust sweetness or tanginess according to your preference.
Step 2
Roughly tear the washed lettuce leaves into large pieces. These will add a fresh, crisp texture and vibrant green color to your bibim-myeon when mixed in.
Step 3
Cook the somyeon noodles in plenty of boiling water with a pinch of salt (about 1/2 tsp). Stir the noodles occasionally with chopsticks to prevent them from sticking together. As the water comes to a boil, add about 1/2 cup of cold water, repeating this 2-3 times to ensure the noodles cook up perfectly chewy. Test a noodle to check for doneness. Once cooked, immediately drain the noodles and rinse them thoroughly under cold running water, as if washing them, to remove excess starch and cool them down quickly. Drain them well in a colander.
Step 4
Add the drained somyeon noodles to the prepared Yeolmu Kimchi bibim sauce. Gently toss and mix the noodles with the sauce until evenly coated. If you prefer a colder dish, you can add a few ice cubes at this stage and mix them in. If adding ice, it might dilute the sauce slightly, so consider making the initial sauce a bit more concentrated.
Step 5
Arrange the torn lettuce leaves attractively on the bottom of your serving bowl or plate.
Step 6
Carefully place the sauced somyeon noodles on top of the lettuce. You can also add some of the sauce mixture and ice cubes alongside the noodles for an extra refreshing touch.
Step 7
Generously top the noodles with the chopped Yeolmu-Eolgal Kimchi. The kimchi not only adds a delightful crunch and spicy flavor but also serves as a beautiful garnish, eliminating the need for other elaborate toppings.
Step 8
Place the halved soft-boiled eggs on top of the bibim-myeon for added richness. For an extra layer of savory flavor, sprinkle with finely shredded roasted seaweed (gim). It’s best to use plain roasted seaweed rather than seasoned varieties to allow the kimchi flavors to shine.
Step 9
