As the weather warms up, fresh spring vegetables are appearing in the markets! This time, I bought some wild chives (dollae) and made a delicious seasoning sauce. While wild chives are wonderful in soybean paste stew, they also make a fantastic sauce to pair with pancakes or to mix into rice for a delightful meal! Ingredients

  • 1 bunch fresh wild chives (look for ones with plump roots)
  • 7 Tbsp soy sauce (you can also mix in some soup soy sauce)
  • 1 Tbsp gochugaru (Korean chili powder, fine grind for color and mild heat)
  • 1/2 Tbsp minced garlic
  • 1 Tbsp sesame oil (for a nutty aroma)
  • 1 Tbsp plum extract (adds a hint of sweetness and depth)
  • 1 Tbsp finely chopped green onion
  • A pinch of sesame seeds (whole or crushed, for extra nuttiness)

Cooking Instructions

Choose wild chives with plump, thick roots for the best flavor and freshness. First, rinse the roots thoroughly under running water to remove any dirt. Trim off any wilted leaves or impurities, then wash them well and drain.

Cut the cleaned wild chives into bite-sized pieces, about 2-3 cm long. Cutting them too small might reduce their satisfying crunch, so aim for a moderate size.

In a bowl, combine 7 tablespoons of soy sauce and 1 tablespoon of sesame oil to form the base of the sauce.
