First, let’s prepare the tteokbokki sauce. In a pot, add 1L of stock. Whisk in 3 Tbsp gochujang, 3 Tbsp gochugaru, 3 Tbsp soy sauce, 3 Tbsp corn syrup, and 1 tsp black pepper until well combined. Adding 1 packet of ramen broth powder will provide a deep and delicious umami flavor, comparable to restaurant-style tteokbokki. Bring to a boil over high heat.

Step 2

Once the broth starts boiling, add the prepared rectangular fish cakes, tteokbokki rice cakes, bean sprouts, and perilla leaves. (Tip: Bean sprouts can become soggy if overcooked. Add them when the rice cakes are almost cooked to maintain their crispiness.)

Step 3

Continue to simmer until the rice cakes are tender and the sauce has thickened slightly. Start by boiling vigorously over high heat, then reduce to medium heat once the rice cakes begin to soften, allowing the sauce to simmer and reduce. Cooking for a sufficient amount of time is key for the tteokbokki to be perfectly cooked.

Step 4

When all the ingredients are nicely cooked, make slits on the cleaned whole squid and add it to the pot. Adding the prepared mussels will enhance the broth with a refreshing seafood flavor and boost its overall deliciousness.
