Easy and Hearty Tteokguk in a Stone Pot (Single Serving)
When the cold weather makes you want to curl up, a bowl of hot tteokguk in a stone pot can help you regain your appetite and warmth. The deep, rich broth made from anchovies and dried shrimp, combined with chewy rice cakes, creates a simple yet satisfying meal. It’s quick to make in just one pot, perfect for busy mornings or evenings. Top your carefully prepared tteokguk with whisked egg and fresh scallions for an even more appealing dish. Basic Ingredients- 2 cups water (approx. 400ml)
- 2-3 dried anchovies (for broth)
- 1 Tbsp dried shrimp
Cooking Instructions
Step 1
To create a deep-flavored broth, pour 2 cups of water into a stone pot (tteokbaegi). Add the dried anchovies and dried shrimp, and bring to a simmer over medium heat. Let it boil for about 5 minutes to allow the savory flavors of the anchovies and shrimp to infuse the water.
Step 2
Remove the anchovies and dried shrimp from the pot. Once the broth is boiling, add 1 tsp of soy sauce for soup, 1/4 tsp of fish sauce, and 1/8 tsp of salt to season. It’s best to start with a lighter seasoning and adjust to your taste.
Step 3
Add 1/2 tsp of minced garlic and stir well to allow the garlic aroma to gently spread through the broth.
Step 4
Add 1 cup of rice cake slices for tteokguk and boil until the rice cakes become soft. It’s important to stir occasionally to prevent the rice cakes from sticking to the bottom of the pot.

Once the rice cakes are tender, add a generous amount of finely chopped green onion to enhance the fragrant aroma.
Step 6
In a separate bowl, whisk 1 egg. Then, slowly pour the beaten egg in a circular motion over the simmering tteokguk. Let it cook undisturbed until the egg forms soft curds.

Finally, add a drizzle of sesame oil for an added nutty flavor, and your delicious tteokguk is ready! Serve immediately while it’s hot.
