Main Ingredients

  • 300g smoked duck breast
  • 1/2 onion, thinly sliced
  • 1/3 red bell pepper, thinly sliced
  • 1/3 orange bell pepper, thinly sliced
  • 1/3 yellow bell pepper, thinly sliced
  • 1 Tbsp minced garlic
  • 2 handfuls of spinach (washed and drained)
  • 1 Tbsp butter
  • A little cooking oil
  • Cornstarch slurry (1 Tbsp cornstarch + 1 Tbsp water)

Warm Duck Sauce

  • 100ml water
  • 1 Tbsp oyster sauce
  • 1/2 tsp sugar
  • 1 tsp soy sauce
  • A pinch of black pepper

Cooking Instructions

Step 1

Melt 1 Tbsp of butter with a little cooking oil in a pan over medium-low heat. Add the sliced onion and minced garlic, and sauté until the onion becomes translucent. Be careful not to burn the garlic, as its aroma is key.

Once the onion is translucent, add all three colors of sliced bell peppers and stir-fry together. When the peppers are slightly softened, pour in all the sauce ingredients (100ml water, 1 Tbsp oyster sauce, 1/2 tsp sugar, 1 tsp soy sauce, a pinch of black pepper) and bring to a simmer over medium heat.

As the sauce begins to simmer, gradually add the cornstarch slurry (made by mixing 1 Tbsp cornstarch with 1 Tbsp water), a teaspoon at a time, while stirring. Continue adding and stirring until the sauce reaches your desired thickness. Adding too much can make it paste-like, so it’s best to add it incrementally.

Cut the smoked duck breast into bite-sized pieces and add it to the pan. Continue to simmer together over medium-low heat for about 2-3 minutes, allowing the sauce to coat the duck. Stir occasionally to prevent the duck from sticking or burning.

In a separate pan, heat 1 Tbsp of butter with a little cooking oil. Add the washed and drained spinach and stir-fry quickly over high heat. Cook just until the spinach wilts slightly to maintain its crisp texture.

Arrange the lightly sautéed spinach attractively on a serving plate. Generously spoon the warm, saucy smoked duck mixture over the top to complete this delicious warm smoked duck salad. Enjoy it freshly made and warm!
