Ingredients

  • Fine soybean powder 4 Tbsp
  • Hot water 1.5 cups (approx. 300ml)
  • Twisted donut (Kkwabaegi) 1/2 piece
  • Sweetened condensed milk 2 Tbsp
  • White sugar 1/2 Tbsp

Cooking Instructions

Step 1

Start by preparing the hot water for your warm Kongguk. Pour 1.5 cups (about 300ml) of hot water into a spacious bowl. It’s best to use water that’s steaming hot but not necessarily boiling vigorously, as extremely hot water might cause the soybean powder to clump. This temperature ensures a smooth consistency.

Step 1

Step 2

Next, let’s create the soybean broth. Gradually add the 4 tablespoons of fine soybean powder to the hot water. Use a whisk or spoon to gently stir and dissolve the powder bit by bit. Continuously stir until there are no lumps and the mixture is smooth and creamy. This slow incorporation prevents clumping and ensures a silky texture.

Step 2

Step 3

Now, it’s time to enhance the flavor of your Kongguk. Add 2 tablespoons of sweetened condensed milk for a touch of sweetness and a richer mouthfeel. The condensed milk will beautifully complement the natural soybean flavor.

Step 3

Step 4

To further sweeten the broth, add 1/2 tablespoon of white sugar. You can adjust the sugar amount based on your preference, considering the sweetness already provided by the condensed milk. Stir everything together thoroughly until well combined. Your smooth and subtly sweet soybean broth is now ready.

Step 4

Step 5

Finally, add the chewy twisted donut (Kkwabaegi) to the warm soybean broth. Cut the donut into bite-sized pieces, about 2-3 cm (around 1 inch), and stir them into the porridge. The donut pieces will absorb some of the broth, becoming wonderfully soft and delicious.

Step 5

Step 6

Serve your warm Daegu-style Kongguk immediately while it’s steaming hot. The combination of the warm, comforting broth, the chewy donut pieces, and the gentle sweetness creates a truly satisfying and cozy meal. Enjoy this delightful dish!
