Main Ingredients
  • 1 medium Potato
  • 2/3 cup Corn Kernels
  • 1/2 cup Diced Spam Ham
  • 1 Tbsp Egg Wash (approx. 1/4 egg)
  • 3 slices 3-Layer Cream Cheese (or 3 slices Cheddar Cheese)

Cooking Instructions

Step 1

Wash the potato thoroughly, place it in a microwave-safe dish, cover loosely with plastic wrap or a lid, and microwave for 5 minutes. Ensure the potato is tender enough to be easily pierced with a fork.

Step 2

Finely dice the Spam ham. Finely dice the carrot as well.

Step 3

Once the potato is cooked, carefully remove it from the microwave. Peel the potato while it’s still warm and mash it until smooth using a fork or masher. Drain the corn kernels thoroughly.

Step 4

In a bowl, combine the mashed potato, drained corn kernels, diced Spam ham, diced carrot, and the egg wash. Knead the mixture with your hands until it forms a cohesive dough. If the mixture is too wet, you can add a little flour.

Step 5

Divide the dough into 3 equal portions. Shape each portion into a round, thick patty.

Step 6

Shred the 3-layer cream cheese (or Cheddar cheese) into thin strips. This will help it melt evenly.

Step 7

Heat 1-2 tablespoons of cooking oil in a non-stick pan over medium-low heat. Place the potato patties in the pan and cook until golden brown on one side, about 3-4 minutes. Adjust heat as needed to prevent burning.

Step 8

Carefully flip the patties over. Reduce the heat to low to ensure they cook through evenly.

Step 9

Arrange the shredded cheese evenly over the cooked side of the patties. Sprinkle with parsley flakes. Cover the pan with a lid and cook on low heat for another 2-3 minutes, or until the cheese is fully melted.

Step 10

Transfer the cooked cheesy potato bakes to a serving plate.
