  • 6 pieces of fried tofu pockets (aburaage, not pre-fried)
  • 600ml Anchovy-Kelp Broth
  • 1 Tbsp Miso Paste
  • 1/2 Tbsp Minced Garlic
  • 1/4 Onion
  • A little Green Onion (scallion)
  • 1/4 pack Enoki Mushrooms
  • A pinch of Salt (for seasoning)

Cooking Instructions

First, prepare 6 pieces of tofu pockets. Using soft, unfried tofu pockets will provide a better texture.

Briefly blanch the prepared tofu pockets in hot water to remove excess oil. Be careful not to soak them for too long, as they might disintegrate.

After draining the oil, cut the tofu pockets into small squares, bite-sized pieces, and gently press them by hand to squeeze out any remaining water. This step helps to create a cleaner broth.

Trim the tough base of the enoki mushrooms, clean them, and then separate them into manageable strands. Thinly slice the onion and finely chop the green onion.

Prepare 600ml of anchovy-kelp broth. You can use commercially available broth cubes or make your own by simmering kelp and dried anchovies for a richer flavor.

Place 1 tablespoon of miso paste into a ladle or sieve and dissolve it well in the broth. It’s best to strain out the solid bits (like soybean pulp) from the miso for a clear soup. (If making miso stew, you can include the solids.)

Once the miso is dissolved and the broth has taken on its color, add the prepared ingredients to begin the simmering process.

Add 1/2 tablespoon of minced garlic, the sliced onions, and the pre-cut tofu pockets. Cook until the onions become translucent.

Finally, add the chopped green onions and simmer for another moment. The delicious aroma of simmering tofu pocket miso soup fills the air!

Once the soup is ready, turn off the heat and add the prepared enoki mushrooms. They will cook in the residual heat. Avoid overcooking the enoki mushrooms, as they can become mushy; adding them after turning off the stove is ideal.
