As the weather gets colder, a warm bowl of soup is just what we crave. Today, I’m introducing a delicious radish soup made with fragrant perilla oil, which creates a wonderfully deep and rich flavor. The clear, refreshing broth combined with tender radish is so satisfying, it will make you want to finish every last grain of rice. Let’s make this hearty Korean home-style dish together!
Main Ingredients- 1/4 Korean radish (approx. 300g)
- 2 Tbsp perilla oil
- 1/2 stalk green onion (generous amount)

Step 1
Introducing a delicious perilla oil radish soup that will warm your body and soul on a chilly day. The savory flavor of rice water combined with the nutty aroma of perilla oil makes this soup perfect for both hangover relief and a hearty meal.
Step 2
First, wash the Korean radish, peel it, and then cut it into thick, bite-sized square pieces, about 0.5cm thick. Cutting it slightly thicker prevents it from breaking apart too much while simmering.
Step 3
In a pot, add 1 tablespoon of perilla oil and the prepared radish. Stir-fry over medium-low heat, being careful not to burn it. Once the radish starts to turn translucent, add 1 tablespoon of minced garlic and stir-fry until fragrant. When the radish and garlic are sufficiently sautéed, pour in plenty of rice water. If you don’t have rice water, you can use plain water or anchovy-kelp broth.
Step 4
Adjust the heat to medium and bring to a boil. Cover the pot and simmer for about 10 minutes, or until the radish is tender and translucent. Once it starts boiling, skim off any foam or impurities that rise to the surface with a spoon for a clearer broth. Add the chopped green onions and simmer for another few minutes.
Step 5
Add 1 tablespoon of soup soy sauce for the base seasoning. Taste the soup and adjust the flavor with a pinch of salt as needed. Using only soup soy sauce can make the broth appear cloudy, so for a clearer soup, consider using salt to adjust the seasoning.
Step 6
Finally, drizzle in another tablespoon of perilla oil for an extra nutty fragrance. Your deeply flavorful perilla oil radish soup is ready! It’s delicious served hot over rice or as a side dish with your meal.
