Main Ingredients
  • 5 tablespoons Oatmeal (approx. 40-50g)
  • 1 medium Sweet Potato (approx. 100-120g)
  • 200ml Coconut Milk
  • 100ml Water
  • Pinch of Salt
  • For Sweetening: Honey, Allulose, or Oligosaccharide (to taste)
  • For Aroma: Pinch of Cinnamon Powder (optional)

Cooking Instructions

Step 1

Prepare a spacious, microwave-safe bowl. Add 5 tablespoons of oatmeal to the bowl. Note that oatmeal varieties absorb liquid differently, so adjust the amount based on your usual preference.

Step 2

Pour 200ml of coconut milk and 100ml of water over the oatmeal. Coconut milk adds a rich, creamy flavor and promotes long-lasting fullness, along with healthy fats. It’s especially beneficial in the morning for providing sustained energy to power your day.

Step 3

Microwave the bowl for 1 minute. This initial heating helps the oatmeal soften and absorb liquid, preparing it to blend beautifully with the sweet potato in the next step.

Step 4

Wash the medium-sized sweet potato thoroughly. You can microwave it whole for about 3-5 minutes, or until tender. Once cooked and slightly cooled, use a spoon to mash the sweet potato directly in its skin. Aim for a consistency with some small chunks remaining for a pleasant texture, rather than a completely smooth puree.

Step 5

Remove the oatmeal mixture from the microwave. Add the mashed sweet potato and stir well to combine. Return the bowl to the microwave and cook for another 1 minute 30 seconds to 2 minutes. Ensure both the oatmeal and sweet potato are heated through and well incorporated. Stirring halfway through can help ensure even heating.

Step 6

Finally, enhance the flavor with a pinch of salt and a sprinkle of cinnamon powder, if desired. For added sweetness, stir in honey, allulose, or oligosaccharide to your liking. Allulose is a great sugar substitute for those following a healthy diet. Mix everything together until well combined. Your nutritious and creamy Sweet Potato Oatmeal Porridge is ready to be enjoyed warm!
