Broth Ingredients

  • 3 liters water
  • 1 handful dried anchovies for broth
  • 1 handful dried shrimp
  • 2 sheets dried kelp (dashima), palm-sized
  • 2 dried pollack (Dipo-ri)

Cooking Instructions

In a pot, combine 3 liters of water with the dried anchovies, dried shrimp, 2 sheets of kelp, and 2 dried pollack. Bring to a boil over high heat to create the base for your delicious broth. This is the foundation for a refreshing soup.

Once the water reaches a rolling boil, reduce the heat to medium and simmer for about 10 minutes to allow the flavors to infuse. After 10 minutes, carefully remove and discard all the broth ingredients. This step ensures a clean and clear broth.

To the clarified broth, add 2 tablespoons of soy sauce for soup and 1/2 teaspoon of minced garlic to season. It’s best to start with less soy sauce and adjust the seasoning to your liking after tasting.

Gently add the 20 frozen dumplings to the pot. You’ll know they’re starting to cook when they float to the surface. Continue to simmer until the dumplings are fully cooked through.

Once the dumplings are partially cooked, add the rice cake slices and the thinly sliced carrot and onion. Continue to boil until the rice cakes are tender and the vegetables have softened, releasing their natural sweetness into the soup.

In a small bowl, whisk the 2 eggs until well combined. When the soup is boiling, slowly drizzle the beaten eggs in a circular motion around the edges of the pot. Resist the urge to stir immediately; let the egg cook and set into beautiful ribbons.
