On a day when the temperature drops dramatically and you don’t want to go outside, there’s nothing better than coming home to a hot bowl of soup with rice! That’s why we’ve prepared this ‘Bean Sprout Kimchi Soup’ perfect for chilly weather. Its spicy and refreshing broth will warm you up from the inside out. Here’s a magical recipe to chase away the cold!

Main Ingredients

  • 1/5 head of well-fermented kimchi
  • 6 cups anchovy-kelp broth
  • 2 cups rice water
  • 1/2 bag fresh bean sprouts (approx. 100g)
  • 1 sheet of fish cake
  • 1/2 stalk of green onion

Cooking Instructions

Step 1

First, pour the anchovy broth and rice water into a pot and bring to a boil over high heat. Once boiling, skim off any foam that rises to the surface to create a clear soup base.

While the base is heating, prepare the other ingredients. Finely chop the kimchi into bite-sized pieces (about 1cm). Rinse the bean sprouts under running water and drain them in a colander. Slice the fish cake into strips about 1cm wide. (If you only have one sheet of fish cake left, don’t worry – you can add it all to enhance the flavor!)

Once the broth is boiling vigorously, add the chopped kimchi first and let it simmer for 1-2 minutes until slightly softened. Then, add the rinsed bean sprouts and the sliced fish cake.

Now it’s time to season the soup. Add 1 Tbsp of minced garlic and 1 Tbsp of fine gochugaru for color and a touch of spice. Then, add 2 Tbsp of soup soy sauce for the basic seasoning. Don’t make it too salty at this stage, as we’ll be adjusting the final taste with salted shrimp later.

After adding all ingredients and seasonings, bring the soup back to a boil. Then, reduce the heat to medium-low and simmer for about 5-7 minutes, or until the bean sprouts are crisp-tender. Be careful not to overcook the bean sprouts, as they can become mushy.

Taste the soup and adjust the seasoning with salted shrimp as needed. If you don’t have salted shrimp, you can use fish sauce or a very small amount of salt to adjust the flavor. The unique umami of salted shrimp will make the soup much richer.

Finally, add the diagonally sliced green onions and let it simmer for another brief moment. Your delicious Bean Sprout Kimchi Soup is ready! Enjoy it immediately with a bowl of rice on the side to ward off the cold.
