Warm and Creamy Homemade Tomato Soup
Recipe for a Rich Tomato Soup Using Cherry Tomatoes
We’ve made a delightful tomato soup that’s perfectly balanced and easy to enjoy. Its refreshing, tangy flavor is truly impressive, making it a wonderful dish for any occasion.
Ingredients- 15 cherry tomatoes
- 0.5 medium onion
- 1 Tbsp minced garlic
- 2-3 Tbsp butter
- 150ml water
- 0.5 Tbsp olive oil
- 1 Tbsp chicken stock
- 1 pinch salt
- A little black pepper
- A little grated Parmesan cheese
- A little dried parsley
Cooking Instructions
Step 1
First, remove the stems from the cherry tomatoes and wash them thoroughly under running water. Once washed and patted dry, cut each tomato in half.
Step 2
Peel the onion, wash it, and then slice it thinly into strips, almost like julienning. This fine slicing helps the onion soften quickly and impart its flavor into the soup.
Step 3
Melt the butter (2-3 Tbsp) in a wide pan over medium-low heat. Add the thinly sliced onion and minced garlic (1 Tbsp). Sauté until the onion becomes translucent and soft, about 3-4 minutes. You’ll know it’s ready when you can smell the garlic becoming fragrant.
Step 4
Once the onion is well cooked and translucent, add the halved cherry tomatoes to the pan. Increase the heat to medium and continue to sauté for about 3-4 minutes more. The tomatoes should start to soften and their skins become slightly transparent. Then, turn off the heat and let the mixture cool down slightly.
Step 5
Transfer the sautéed tomato and onion mixture into a blender or use an immersion blender. To help achieve a smooth consistency, add about 50ml of the water. Blend until you have a very smooth purée. A smooth texture is key to a delicious soup.
Step 6
Pour the blended tomato mixture back into the clean pan. Add the remaining 100ml of water (for a total of 150ml) to adjust the consistency. Bring the soup back to a simmer over medium-low heat.
Step 7
As the tomato soup begins to simmer, stir in the olive oil (0.5 Tbsp) to enhance the flavor. Mix it well into the soup.
Step 8
For an extra depth of flavor, add the chicken stock (1 Tbsp) and stir until it’s fully incorporated. Using a good quality chicken stock will give your soup a richer taste.

Finally, season the soup to your taste with a pinch of salt and a little black pepper. Taste as you go to ensure it’s perfectly seasoned; you can add a tiny pinch of sugar if you prefer a slightly sweeter profile.

Carefully ladle the warm tomato soup into serving bowls. Garnish with a sprinkle of grated Parmesan cheese and a dash of dried parsley for an attractive presentation.
