- Wheat Noodles (Somen) 1 serving (approx. 100g)

- Dried Anchovies for broth 8

- Water 6 cups (approx. 1.2L)

- Soy Sauce 5 Tbsp (or soup soy sauce)
- Red Pepper Flakes 1/2 Tbsp
- Chopped Green Onion a little
- Minced Garlic 1/2 tsp

Cooking Instructions
Step 1
First, let’s make the broth, the heart of delicious Janchi Guksu! Pour 6 cups (approx. 1.2L) of water into a pot, add 8 dried anchovies (with innards removed) and 2 pieces of dried kelp. Bring to a boil over high heat. Once boiling, remove the kelp after 5 minutes, and continue boiling the anchovies for another 10 minutes to create a rich anchovy-kelp broth. While the broth is simmering, you can prepare the other ingredients to save time!
Step 2
While the broth is brewing its delicious flavor, let’s get ready to cook the noodles. In a large pot of boiling water, add 1 serving of somen noodles. Gently loosen them to prevent sticking and cook until al dente. Typically, cooking for 30 seconds to 1 minute less than the package instructions will give you a perfectly chewy texture. After boiling, rinse the noodles thoroughly under cold water to remove excess starch and drain well. This will make them even more springy.
Step 3
While the noodles are cooking, let’s prepare the egg garnish. Beat 2 eggs lightly with a pinch of salt. Pour thinly onto a lightly oiled pan heated over low heat. Once the egg is cooked, let it cool slightly, then thinly slice it into julienne strips for garnish. This step will make your Janchi Guksu look much more appealing.
Step 4
Peel the carrot and cut it into thin julienne strips. Lightly oil a pan and stir-fry the carrot strips over low heat until crisp-tender. Be careful not to overcook, as they can become mushy; just cook until the color becomes vibrant. Arrange these stir-fried carrots and the julienned egg omelet attractively as toppings in the bowl where you’ve placed the noodles.
Step 5
Now it’s time to make the delicious seasoning sauce! Finely chop some green onions. In a small bowl, combine 5 Tbsp soy sauce, 1/2 Tbsp red pepper flakes, 1/2 tsp minced garlic, and the chopped green onions. Mix well. You can add a little sugar to your preference, or using soup soy sauce can add an even deeper savory flavor.
Step 6
All preparations are complete! Pour the warm, flavorful anchovy-kelp broth over the noodles. Artfully arrange the prepared toppings (egg strips and stir-fried carrots) and add the seasoning sauce to your taste.
