Have leftover potatoes with sprouts at home? Don’t worry! If you thoroughly remove the sprouts, the potato’s original flavor remains intact, allowing you to make incredibly delicious potato pancakes. These pancakes will be crispy on the outside and tender on the inside. By adding colorful vegetables on top, you can create visually stunning potato pancakes that are a feast for the eyes as well. Ingredients- 4 Potatoes
- 2 Red Chili Peppers
- 20g Garlic Scapes

Step 1
First and foremost, prepare all the necessary ingredients for your potato pancakes. For any potatoes with sprouts, ensure you carefully remove all sprouts and then peel them.

Slice the red chili peppers into thin, round pieces. Trim the garlic scapes and cut them into approximately 3cm lengths, then halve them lengthwise for bite-sized pieces. (I recall adding chili peppers; perhaps it was to add a touch of spiciness!)

Using a grater, finely shred the prepared potatoes. For a pleasant texture, avoid grating them into a completely smooth paste; a slight grittiness is desirable.

Place the grated potatoes in a fine-mesh sieve to separate the solids from the liquid. Set the liquid aside. Allow the separated liquid to sit undisturbed for about 30 minutes to an hour, letting the potato starch settle at the bottom.

Once the starch has settled, carefully pour off the clear liquid from the top. Scrape the white potato starch that has settled at the bottom of the cup and combine it with the potato solids. Add 1 teaspoon of salt and mix thoroughly until everything is well combined, creating your delicious potato batter.

Heat a frying pan over medium heat and add a generous amount of cooking oil. Spoon small portions of the potato batter onto the hot pan, spreading them thinly into small, round shapes. Once the bottom is golden brown, carefully flip the pancakes. Arrange the pre-sliced red chili peppers and garlic scapes attractively on top of each pancake to create a beautiful design. Continue to cook until both sides are golden brown and crispy. Your delicious potato pancakes are ready!
