As the weather gets warmer, I find myself craving lighter meals like noodles or salads. Lately, Vietnamese spring rolls (Goi Cuon) have become my absolute favorite! By alternating the main ingredients like beef, pork, chicken, or shrimp with seasonal vegetables and fruits, you can enjoy them all week long without getting bored. Plus, they’re light and easy to digest, making them perfect for warm days. This time, I prepared a delicious sirloin steak to accompany a vibrant assortment of fresh vegetables and fruits. It was so satisfying and flavorful, even without rice! Vietnamese spring rolls are not only a fantastic diet-friendly option but also a wonderfully healthy meal. Main Ingredients- 1 piece Sirloin Steak (approx. 200g)
- Salt to taste
- Pepper to taste
- Herb mix (optional)
- A little Olive Oil
- 5 leaves Lettuce
- 1/4 Red Cabbage
- 1 Cucumber
- 2 Bell Peppers (various colors)
- 5-6 Cherry Tomatoes
- 1/2 Orange
- 10-12 Rice Paper Wrappers
- Hot Water (for softening wrappers)
- Chili Sauce (to taste)

- 2 Tbsp Vinegar
- 2 Tbsp Lemon Syrup (or sugar)

Cooking Instructions
Step 1
First, let’s prepare the vegetables. Wash the lettuce leaves and tear them into bite-sized pieces. Thinly slice the red cabbage, soak it in cold water for a few minutes, then drain well. Cut the cucumber and bell peppers into roughly 5-7cm long strips, similar in thickness. Halve the cherry tomatoes. Peel the orange and cut the segments into bite-sized pieces.

Now, let’s cook the sirloin steak. Pat the steak dry with paper towels and season generously on both sides with salt, pepper, and your chosen herb mix. Heat a little olive oil in a pan over medium-high heat. Sear the steak for a few minutes per side until nicely browned and cooked to your liking. Let it rest for a few minutes, then slice it into 0.5-1cm thick pieces.
Step 3
Finally, it’s time to assemble and serve! Arrange the sliced steak and all the prepared vegetables and orange segments attractively on a large platter or tray. To assemble the spring rolls, briefly dip a rice paper wrapper in hot water until it becomes pliable. Place your desired fillings (vegetables, steak) in the center and roll it up tightly. Serve immediately with the prepared dipping sauces. For the mustard sauce, simply whisk together soy sauce, vinegar, lemon syrup (or sugar), and mustard.
