Spring Roll Ingredients

  • 8 sheets Rice paper wrappers
  • 1/2 Carrot
  • 1 Cucumber
  • 4 imitation crab sticks
  • 4 slices Ham
  • 8 leaves Perilla leaves (깻잎)
  • 2 slices Pineapple
  • 1/2 Yellow bell pepper
  • 1/2 Red bell pepper

Peanut Dipping Sauce Ingredients

  • 4 tsp Peanut butter
  • 2 tsp Mayonnaise
  • 1 tsp Mustard sauce
  • 1 tsp Lemon juice
  • 1 tsp Oligosaccharide (or honey/corn syrup)

Cooking Instructions

Step 1

First, prepare all the filling ingredients for your spring rolls. Gather fresh vegetables like imitation crab sticks, carrots, cucumber, bell peppers, and pineapple.

Step 1

Step 2

Thoroughly wash the cucumber. To enhance its crispiness and remove any slight bitterness, scrub the skin with coarse salt.

Step 2

Step 3

Cut the prepared cucumber into three equal pieces, then slice them into thick, substantial strips, about 1 to 1.5 cm thick. Prepare the carrots similarly, cutting them into large, chunky pieces, matching the cucumber’s thickness. This size ensures a satisfying bite.

Step 3

Step 4

Slice the ham into bite-sized pieces. Lightly grease a pan with oil and pan-fry the ham slices until they are golden brown and slightly crispy. This adds a wonderful savory flavor. Be careful not to overcook them.

Step 4

Step 5

Cut the colorful bell peppers into similarly large chunks after removing the seeds. Slice the pineapple into pieces that are not too large. The sweetness of the pineapple will balance the other flavors.

Step 5

Step 6

Wash 8 perilla leaves (깻잎) thoroughly and pat them dry. Gently patting the leaves with a paper towel will help prevent the rice paper from tearing when you roll the spring rolls.

Step 6

Step 7

Now, prepare the hot water for softening the rice paper wrappers. Bring a pot of water to a rolling boil, then turn off the heat. You’ll use this hot water for dipping.

Step 7

Step 8

Pour the hot water into a wide, shallow bowl or dish. This will be used to soften the rice paper. Be mindful that the water shouldn’t be boiling hot when you dip the wrappers, or they might disintegrate too quickly.

Step 8

Step 9

Get your rice paper wrappers ready for assembly. It’s best to prepare the wrappers just before you start rolling, as they can dry out or become sticky if left out for too long.

Step 9

Step 10

Dip one sheet of rice paper into the warm water for about 10-20 seconds, until it becomes pliable and soft. It should be flexible enough to roll without tearing. Avoid over-soaking.

Step 10

Step 11

Carefully lay the softened rice paper wrapper flat on a clean cutting board or work surface. Place a perilla leaf on top, then arrange your prepared fillings – carrots, cucumber, imitation crab, ham, bell peppers, and pineapple. Don’t overfill, or the wrapper might break.

Step 11

Step 12

Fold the two sides of the rice paper inward over the filling to create a secure pocket. Then, starting from the bottom edge, tightly roll the wrapper upwards to form the spring roll.

Step 12

Step 13

Roll each spring roll individually and arrange them neatly on a serving plate. Your delicious Vietnamese spring rolls are taking shape!

Step 13

Step 14

To make them easier to eat, cut each spring roll in half. This makes them more manageable for a single bite and helps keep the filling neatly contained.

Step 14

Step 15

Arrange the halved spring rolls attractively on a serving dish. They are almost ready to be enjoyed!

Step 15

Step 16

Now, let’s make the flavorful peanut dipping sauce. In a small bowl, combine 4 tsp peanut butter, 2 tsp mayonnaise, 1 tsp mustard sauce, 1 tsp lemon juice, and 1 tsp oligosaccharide (or your preferred sweetener).

Step 16

Step 17

Whisk the sauce ingredients together. If the sauce seems too thick, gradually add about 1 tsp of water to reach your desired consistency. Stir until smooth. You can skip adding water if the consistency is already perfect for you.

Step 17

Step 18

Transfer the well-mixed peanut sauce into a small dipping bowl or ramekin.

Step 18

Step 19

Dip your fresh Vietnamese spring rolls into the rich peanut sauce and enjoy! The combination of crisp vegetables and the creamy, savory sauce is truly delightful. This makes for a healthy and incredibly tasty meal.
