Main Ingredients- 1/3 bunch fresh chives (approx. 100g)
- 3 mini bell peppers (red, yellow, orange, etc.)
- Cooking oil, as needed
- 50ml water

Cooking Instructions
Step 1
Prepare all the ingredients for your delicious tri-color chive pancakes. It’s important to wash them thoroughly and pat them dry.

For the colorful mini bell peppers, remove the stems and seeds, then finely mince them. These will be the beautiful garnish on your pancakes.

For the chives, finely mince about 1/3 of them. Roughly chop the remaining 2/3 for easier blending. The minced chives will be used as a topping, similar to the bell peppers.

In a blender or blender cup, combine the roughly chopped chives with about 50ml of cold water. Blend until smooth, but avoid over-blending to preserve the fresh chive aroma. The goal is to capture that vibrant green color.

Pour the smoothly blended chive liquid into a wide bowl. This chive liquid will be the crucial base for the flavor, aroma, and color of your chive pancakes.

To the chive liquid, add the measured tempura flour (250ml) and anchovy sauce (1 Tbsp). Gently whisk or stir with chopsticks until the batter is smooth and free of lumps. Then, add the finely minced chives and mix evenly.

Give the batter one more gentle stir to incorporate the minced chives evenly. This completes your delicious chive pancake batter. It’s best not to overmix; just combine the ingredients until well incorporated.

Heat a pan over medium-low heat. Add a moderate amount of cooking oil. Ladle about one spoonful of batter onto the pan and spread it into a round shape. Try not to make the pancake too thin. Arrange a small amount of the minced bell peppers in the center for a pop of color.

Once the edges of the pancake start to turn golden brown, carefully flip it with a spatula. Cook the other side until it’s also evenly golden and crisp. Flipping back and forth ensures both sides are cooked perfectly, resulting in a delightful tri-color chive pancake.
