(Each recipe serves approximately 1 person). If you love noodle dishes but are concerned about calories or dieting, I highly recommend these! Spicy & Sweet Zucchini Bibim Guksu- 1 Zucchini
- 2 Tbsp Gochujang (Korean chili paste)
- 1/2 tsp Gochugaru (Korean chili flakes)
- 1 Tbsp Soy Sauce
- 1 Tbsp Sugar
- 2 Tbsp Vinegar
- 1 Tbsp Minced Garlic
- 1 Tbsp Sesame Oil
- Garnishes (optional)
- 1/2 tsp Toasted Sesame Seeds
Cool & Clean Zucchini Janchi Guksu- 1 Zucchini
- 3-4 cups Anchovy-Kelp Broth
- 1 Tbsp Soy Sauce (for soup)
- 1/2 tsp Salt
- Egg Omelet Strips (garnish)
- Kelp (garnish)
- Chili Threads (garnish, a pinch)

- 1/2 – 1 King Oyster Mushroom
- 1/4 Onion
Ultra-Easy Zucchini Ramen- 1/2 Zucchini
- 1/2 pack Ramen noodles
- 1 packet Ramen soup base
- 1 Zucchini

Cooking Instructions
Step 1
The key to zucchini noodle dishes is to cut the zucchini into thin, long strips, resembling noodles. The thinner the cut, the better the noodle texture and the more evenly the seasoning will be absorbed.
Step 2
(Spicy & Sweet Zucchini Bibim Guksu) Sprinkle about 1/2 teaspoon of salt over the cut zucchini noodles and let them sit for 10 minutes. Gently pat dry the excess water released from the zucchini with a paper towel. Then, microwave for 1 minute to create firm zucchini noodles.
Step 3
Next, in a bowl, combine the zucchini noodles with the prepared bibim sauce (2 Tbsp Gochujang, 1/2 tsp Gochugaru, 1 Tbsp Soy Sauce, 1 Tbsp Sugar, 2 Tbsp Vinegar, 1 Tbsp Minced Garlic, 1 Tbsp Sesame Oil). Mix well. Garnish with optional vegetables and toasted sesame seeds for an even more appealing dish.
Step 4
(Cool & Clean Zucchini Janchi Guksu) Prepare the zucchini noodles using the same method as in Step 2 for the Zucchini Bibim Guksu.
Step 5
Place the prepared zucchini noodles in a bowl. Pour in warm anchovy-kelp broth (3-4 cups). Season the broth with 1 Tbsp soy sauce (for soup) and 1/2 tsp salt. Arrange the garnishes, such as egg omelet strips, kelp, and chili threads, attractively on top.

Pro Tip! Try mixing half zucchini noodles with regular noodles when cooking. This reduces the overall calorie count of the noodle dish while allowing you to enjoy the refreshing crunch of zucchini alongside traditional noodles.

(Simple Yet Delicious Zucchini Spaghetti) Chop the broccoli, king oyster mushrooms, and onion into bite-sized pieces to accompany the zucchini noodles. In a wide bowl, combine the zucchini noodles and the prepared vegetables. Add 2 tablespoons of spaghetti sauce on top.
Step 8
Cover the bowl with a microwave-safe lid or plastic wrap (pierce a few holes in the wrap) and microwave for about 2 minutes and 30 seconds. This will gently cook the vegetables and heat the sauce.

Be cautious of the hot steam when removing the lid or wrap from the microwave. You can see how the sauce splattered inside the lid! Without a cover, your microwave would likely be a mess.^^

After microwaving, gently stir everything together to ensure the sauce is evenly distributed among the noodles and vegetables. You can add Parmesan cheese or herbs for extra flavor. Transfer the finished spaghetti to a nice plate for a delightful meal.

(Ultra-Easy Zucchini Ramen) Combine half a pack of ramen noodles and the prepared zucchini noodles in a pot. Add 1 packet of ramen soup base and water (according to the ramen package instructions), then boil together. The zucchini will absorb the ramen broth, enhancing the flavor.

For an even lighter option, you can omit the ramen noodles entirely and enjoy a delicious noodle soup using only the zucchini noodles and the ramen soup base! While any vegetable would be tasty with ramen seasoning, zucchini offers a special sweetness that makes it particularly delicious.
