Here’s a simple and delicious appetizer that my wife and I love to enjoy! It’s also a fantastic rice bowl for a hearty meal. It’s truly nothing complicated, so please try following along!

Main Ingredients

  • Shrimp 5 pieces (fresh or thawed shrimp recommended over pre-cooked)
  • Bok Choy 2 heads
  • Broccoli 4 florets
  • Red Bell Pepper 1/4
  • Yellow Bell Pepper 1/4
  • King Oyster Mushrooms 1 cup
  • Enoki Mushrooms 1 cup
  • Green Onion 1 stalk
  • Garlic 3 cloves

Seasoning & Others

  • Oyster Sauce 2 Tbsp
  • MSG (Optional) a pinch (approx. 1g)
  • Black Pepper a pinch (approx. 1g)
  • Water 120ml
  • Slurry (Potato Starch 1 Tbsp + Water 1 Tbsp)
  • Chili Oil 2 Tbsp

Cooking Instructions

Step 1

First, wash and prepare all the main ingredients: shrimp, bok choy, broccoli, bell peppers, mushrooms, green onion, and garlic. If you have any other leftover vegetables in your refrigerator, feel free to add them to the dish. Using a variety of vegetables will enhance the flavor and texture.

Trim the ends of the green onion, then slice it lengthwise in half. Cut it into bite-sized pieces, about the width of a finger segment. Peel the garlic cloves and thinly slice them into slivers. Sliced garlic releases more flavor when stir-fried.

For the bok choy, trim the root end and separate the leaves from the stems. Cut the stems into 2-3 cm lengths. Divide the broccoli into bite-sized florets. Cut the bell peppers and mushrooms into similar bite-sized pieces. Ensuring all ingredients are cut to a similar size will help them cook evenly.

Heat a pan over medium heat and add 2 tablespoons of chili oil. Add the prepared green onion and sliced garlic. Stir-fry for about 1 minute until fragrant. This step infuses the oil with a wonderful aroma from the aromatics, which greatly enhances the overall flavor of the dish.

Once the green onion and garlic are fragrant, add all the prepared vegetables and mushrooms to the pan. Stir-fry briefly. It’s important to maintain the crisp-tender texture of the vegetables, so avoid overcooking. Stir-fry for only about 1-2 minutes.

Pour in 120ml of water and bring it to a boil over high heat. Cooking quickly over high heat helps to preserve the fresh flavors of the vegetables.

As the water begins to boil, add 2 tablespoons of oyster sauce for seasoning. If you desire extra umami, you can add a pinch of MSG (approximately 1g). MSG is optional, so feel free to add it according to your preference. Also, add a pinch of black pepper (approximately 1g) to enhance the aroma.

Now, add the prepared shrimp to the pan. The size of the shrimp doesn’t matter much, but using fresh or thawed shrimp will give you a much better, springier texture compared to pre-cooked (boiled) shrimp.

Finally, it’s time to thicken the sauce. Prepare the slurry by mixing 1 tablespoon of potato starch with 1 tablespoon of water in a small bowl until smooth. Gradually add about 1.5 tablespoons of this slurry to the pan, stirring gently to distribute it evenly. ★Important: Do not add all the slurry at once, as it can clump. Add it in 2-3 batches while stirring to achieve your desired thickness. It’s best to use 100% potato starch for the smoothest results.★
