Cooking Instructions
Step 1
Heat 3 tablespoons of olive oil in a large pan over medium-low heat. Add 1 tablespoon of minced garlic, chopped green onion, and coarsely chopped onion. Sauté until fragrant, about 2-3 minutes, allowing the vegetables to soften and release their aromas. This forms the flavorful base for your fried rice.
Step 2
Cut the prepared squid into bite-sized pieces, about the thickness of the tentacles. Add the squid to the pan and stir-fry over high heat just until it turns opaque, about 1-2 minutes. Be careful not to overcook, as it can become tough. Remove the cooked squid from the pan and set aside.

Turn off the heat briefly. Add the seasonings to the pan: 1 tablespoon sugar, 2 tablespoons oyster sauce, and 1 tablespoon soy sauce. Also, add the finely diced carrot. Turn the heat back up to high and quickly stir-fry everything for about 30 seconds to a minute, ensuring the sauce coats the vegetables. The goal is to cook the carrot slightly while keeping its crisp texture.
Step 4
Turn off the heat again briefly. Add the 3 bowls of warm cooked rice to the pan. Gently break up any clumps of rice with a spatula and get ready to mix it with the other ingredients.

Mix the rice thoroughly with the sautéed vegetables and seasonings. Stir and toss continuously over medium-high heat until all the ingredients are evenly combined and the rice is heated through. Ensure every grain of rice is coated in the delicious sauce.

Finally, reduce the heat to medium. Return the cooked squid to the pan. Sprinkle in 1 tablespoon of sesame seeds and a pinch of black pepper.
