  • 3 squid (cleaned and prepared)
  • 3 bowls of cooked rice (warm)
  • 1/3 carrot (finely diced)
  • 1 green onion (chopped)
  • 1/2 onion (coarsely chopped)

  • 1 Tbsp soy sauce
  • 1 Tbsp sugar
  • 1 Tbsp minced garlic
  • 3 Tbsp olive oil
  • 1 Tbsp sesame seeds
  • 2 Tbsp sesame oil
  • Pinch of black pepper

Cooking Instructions

Step 1

Heat 3 tablespoons of olive oil in a large pan over medium-low heat. Add 1 tablespoon of minced garlic, chopped green onion, and coarsely chopped onion. Sauté until fragrant, about 2-3 minutes, allowing the vegetables to soften and release their aromas. This forms the flavorful base for your fried rice.

Step 2

Cut the prepared squid into bite-sized pieces, about the thickness of the tentacles. Add the squid to the pan and stir-fry over high heat just until it turns opaque, about 1-2 minutes. Be careful not to overcook, as it can become tough. Remove the cooked squid from the pan and set aside.

Step 3

Turn off the heat briefly. Add the seasonings to the pan: 1 tablespoon sugar, 2 tablespoons oyster sauce, and 1 tablespoon soy sauce. Also, add the finely diced carrot. Turn the heat back up to high and quickly stir-fry everything for about 30 seconds to a minute, ensuring the sauce coats the vegetables. The goal is to cook the carrot slightly while keeping its crisp texture.

Step 4

Turn off the heat again briefly. Add the 3 bowls of warm cooked rice to the pan. Gently break up any clumps of rice with a spatula and get ready to mix it with the other ingredients.

Step 5

Mix the rice thoroughly with the sautéed vegetables and seasonings. Stir and toss continuously over medium-high heat until all the ingredients are evenly combined and the rice is heated through. Ensure every grain of rice is coated in the delicious sauce.

Step 6

Finally, reduce the heat to medium. Return the cooked squid to the pan. Sprinkle in 1 tablespoon of sesame seeds and a pinch of black pepper. Drizzle in 2 tablespoons of sesame oil and give everything a final mix. Once the fragrant sesame oil is incorporated, turn off the heat. Your delicious squid fried rice is ready to serve! For an extra treat, consider topping it with a fried egg or some shredded seaweed.
