Spring Greens Inari Sushi: Blooming with Spring Flavors (Easy Bento Box, Seasonal Spring Dish)
We’ve transformed the delightful flavors of spring into delicious Inari sushi by incorporating fresh, seasonal greens. This simple yet visually appealing dish is perfect for spring picnics or any special occasion.
Ingredients- Store-bought Inari sushi kit (fried tofu pouches, sushi vinegar mix, dried vegetables)
- 2 bowls of warm mixed grain rice or brown rice
- 1 handful of fresh water parsley (minari, approx. 50g)
- 1 handful of stone crop (dolnamul, approx. 50g)
- 1/4 carrot
- 1-2 leaves of bok choy
- 1/2 tsp brown rice oil or vegetable oil
- Pinch of salt
Cooking Instructions
Step 1
To ensure the freshness and cleanliness of the spring greens, soak the minari and dolnamul in water with a few drops of vinegar for about 5 minutes. Rinse them thoroughly multiple times, then drain them completely in a colander. This step is crucial to prevent the rice from becoming mushy.
Step 2
Once drained, finely chop the minari and dolnamul on a cutting board into pieces about 0.5 cm in size. Chopping them finely allows their texture to meld well with the rice while still offering a pleasant bite.
Step 3
Separate the leaves and stems of the bok choy, then finely chop both. Peel the carrot, julienne it, and then finely mince the julienned pieces. This step adds color and a delightful crunch to the sushi.
Step 4
Heat a pan over medium-high heat with just a hint of brown rice oil. Add the minced carrot and bok choy, along with a pinch of salt. Stir-fry quickly until the vegetables are slightly tender but still crisp. This retains their vibrant color and satisfying texture.
Step 5
In a bowl with the warm mixed grain or brown rice, add the chopped minari, dolnamul, and the stir-fried vegetables. Gently mix everything together with a rice paddle, being careful not to mash the rice grains.
Step 6
Add the sushi vinegar mix and dried vegetables from the Inari sushi kit to the rice mixture. Mix well until the rice is evenly seasoned and has a slightly glossy appearance. If needed, you can add a little more salt or a squeeze of lemon juice for extra flavor.
Step 7
Carefully open each fried tofu pouch and fill it with the prepared rice mixture. Avoid overfilling, as this can cause the pouch to burst. Gently shape the rice within the pouch, leaving a little space at the opening for a neat presentation. Your colorful Spring Greens Inari Sushi is now ready!
