Essential Ingredients

  • 1 serving of somen noodles (approx. 100g)
  • 1 paper cup of boiled green peas (approx. 100g)
  • 2 tablespoons roasted peanuts
  • 2 tablespoons roasted sesame seeds
  • 2 paper cups of water (approx. 400ml)
  • 4 ice cubes
  • A little cucumber, julienned
  • 1/2 hard-boiled egg, sliced
  • 1/2 tomato, sliced
  • 1/3 tablespoon salt (or to taste)

Cooking Instructions

Step 1

In a blender, combine the boiled green peas (1 paper cup), roasted peanuts (2 tbsp), roasted sesame seeds (2 tbsp), cold water (2 paper cups), and ice cubes (4). Blend until smooth to create the noodle soup base. This will yield a creamy, nutty broth.

Pour the blended mixture through a fine-mesh sieve into a bowl to strain the smooth green pea broth. Discard any solids. Season the broth with 1/3 tablespoon of salt, or adjust to your preference, and stir well to combine.

Bring a pot of water to a boil for cooking the noodles. Once boiling, add a pinch of salt (about 1/3 tsp) and the somen noodles (1 serving). Adding salt to the boiling water helps season the noodles as they cook and prevents them from sticking together.

Cook the somen noodles for about 3-4 minutes, stirring occasionally to prevent sticking, until they are tender yet still have a slight bite. Drain the noodles and immediately rinse them under cold running water. Rinsing in cold water removes excess starch and gives the noodles a delightfully chewy texture.

Gently squeeze out any excess water from the rinsed noodles and arrange them neatly in a serving bowl. Gently separate the noodles to ensure they aren’t clumped together.

Pour the chilled green pea broth over the noodles in the bowl. Garnish with the julienned cucumber, sliced hard-boiled egg, and sliced tomato. For an extra touch, you can sprinkle more sesame seeds on top. Enjoy your cool and healthy green pea noodle soup!
