  • 1/3 block ham, sliced

Today, we’re going to make Vietnamese Summer Rolls, also known as Goi Cuon. These are a fantastic choice for entertaining guests or for a housewarming party. They look as good as they taste and are a wonderful way to enjoy fresh ingredients.

Prepare all your filling ingredients. For the cucumber, wash it thoroughly, gently rub it with a little coarse salt, rinse, and then julienne it (cut into thin strips). If using ham that needs cooking, lightly blanch it in boiling water or pan-fry it until cooked through. Then, slice it into similar lengths as the vegetables. For the bell pepper, remove the seeds and julienne it as well. Aim for strips that are about the length of your finger for easy eating.

Now, let’s assemble the rolls. Prepare a shallow dish with warm water. Dip one sheet of rice paper into the warm water for about 10-20 seconds, just until it becomes pliable and soft. Be careful not to over-soak, as it can tear easily. Once softened, carefully lift the rice paper and lay it flat on a clean, damp kitchen towel or a plate. Arrange your prepared vegetables and ham in the center of the wrapper. Then, fold in the sides and roll it up snugly, like a burrito, to create your fresh summer roll. Tucking in the sides helps keep the fillings from escaping.
