Ingredients

  • 4 large eggs
  • 5cm piece of carrot
  • 1 pinch of salt
  • 2 tablespoons mirin (rice wine)

First, thoroughly wash the carrot and peel it. Then, julienne it into very thin strips and mince finely. Finely chopping the carrot will ensure it’s evenly distributed within the egg roll, creating a beautiful color.

Crack 4 fresh eggs into a bowl. Add a pinch of salt to help eliminate any eggy smell and to season the eggs.

Add 2 tablespoons of mirin, which helps remove any eggy odor and adds a tender texture. Whisk vigorously with a whisk, ensuring you break down the egg yolks and whites thoroughly. Incorporating plenty of air will make the egg roll fluffier.

Add the finely chopped carrots to the egg mixture. Gently stir with chopsticks or a whisk until the carrots are evenly dispersed throughout the egg mixture, making sure there are no clumps.

Heat a non-stick pan over medium-low heat and lightly coat it with cooking oil. Use a paper towel to spread the oil evenly across the pan; this prevents the egg from sticking and helps it roll smoothly. Pour about one ladleful of the egg mixture thinly into the pan, spreading it to cover the bottom.

Once the edges start to set, gently fold about one-third of the egg mixture over using a spatula. Keep the heat low during this process to prevent burning.

After folding about two-thirds of the egg, push it towards the edge of the pan. Pour more egg mixture into the cleared space, allowing it to flow underneath the folded egg. Once the bottom starts to set, roll it up again. Repeat this process, pouring egg mixture and rolling, until you achieve your desired thickness for the egg roll.
